  • 3 Tbls Clarified Butter ghee or Vegetable oil
  • cup flour
  • salt and pepper
  • 2 eggs
  • 1 Tbls milk
  • 3 Tbls parmesan cheese finely grated
  • 1 Tbls chopped parsley or scallions
  • 1 Lbs chicken Cutlets
  • juice of 1/2 lemon
  • cup chicken broth
  • 1 Tbls unsalted butter


  • Preheat oven 375 ° .Season chicken with salt and pepper on both sides
  • Place your flour in a bowl with a little S +P. In another bowl mix your eggs , milk, parsley and cheese. Heat butter in large sauté pan. One at time dip chicken into seasoned flour then into egg mixture then back into flour and finally into pan. Brown off on one side, turning that same side to produce even browning. Flip them over ,pop into oven 12 to 15 minutes or until firm to the touch. Take out of oven , pour broth and lemon juice over the chicken , add butter and swirl around in pan covering the top of chicken with some of the sauce. Yum
