Spanish Rice
Ingredients
- 1 + 1/2 Tbls olive oil
- 2 cloves garlic chopped
- ½ cup onions small dice
- 1 Jalapino pepper minced
- ½ tsp dried oregano
- 1 + 1/12 cups basmati rice rinsed
- 1 cup chopped tomatoes
- 1 + 1/2 cups pinto beans
- 1 + 1/12 cups water
- 1 cup tomato sauce
- 1 tsp salt
Instructions
- Heat oil in a medium size pot, add garlic, onions, oregano + Jalapeño pepper cook 3 minutes . Stir in rice, then chopped tomato, pinto beans, water, tomato sauce and salt. Bring to boil , cover and reduce to a slow simmer . Cook 15 minutes , turn off heat and let sit 10 minutes without removing lid.Then fluff with fork.
