Pickled Beets

  • 3 medium sized beets
  • 1/4 cup red wine vinegar
  • 1 + 1/2 Tbls brown sugar
  • salt and pepper
  • 1/2 cup red onion thinly sliced
  • 1/3 cup grape seed oil
  • Goat cheese optional


  • Boil beets , then peel and slice them into thin strips. In a small pot combine vinegar , sugar, salt and pepper. Bring them to boil add onions and turn off heat let cool. Add beets ,toss, let sit for a minute. add oil mix well. Adjust seasoning. Top with little crumbled goat cheese if desired.
